King Oyster Mushrooms with Herb Butter

The hearty texture of king oyster mushrooms makes them ideal for grilling over high heat. They turn crisp and golden on the outside while remaining firm and chewy inside, with impressive char lines. This simple method adds rich, savoury BBQ flavours to a vegan dish.

Yields4 Servings
 50 g Butter
 1 tbsp Tarragon (chopped)
 1 tsp Flat leaf parsley (chopped)
 1 tsp Chives (snipped)
 1 Clove of Garlic
 1 tsp Lemon zest
 280 g King oyster mushrooms
 60 ml Olive oil
 Salt (pinch)
 Black pepper (pinch)
 1 tsp Lemon juice

1. Blend the first 6 ingredients to make a herb butter, set aside.

2. Toss the mushrooms with the oil, salt and pepper.

3. On a hot grill, place the mushrooms cut side down and grill starting to caramlise (around 4 mins).

4. Turn over and repeat on the other side. Flip again, but this time brush with a little of the herb butter.

5. Flip and do the same again, keeping a little herb butter spare.

6. Remove into a bowl with the remaining herb butter and toss together with the lemon juice.
