Marmalade blender cake

This easy and fragrant Orange Blender Cake is perfect for citrus lovers! Made with a whole orange (yes, peel and all!), it’s bursting with fresh flavour and a beautifully moist texture. With just a few simple ingredients and minimal effort—thanks to the blender—this cake comes together in no time. Enjoy it as a light afternoon treat or a delicious dessert with a dusting of icing sugar.

 1 orange
 3 eggs
 200 g sugar
 90 ml sunflower oil
 1 tsp vanilla extract
 60 ml milk (plant based or regular is fine)
 250 g flour
 1 tsp baking powder

Preheat oven to (180°C). Grease and line a 7-inch (18 cm) cake pan.

Use a thin-zested orange (e.g., navel). Wash, trim the ends, cut into pieces, and place in a blender.

Add sugar, oil, milk, and eggs. Blend until smooth.

Sift in flour and baking powder, then blend briefly to combine.

Pour into the prepared pan and bake for 45 minutes or until a toothpick comes out clean.

Once baked, top it off with a marmalade glaze to give it that beautiful glossy finish.
