Smoked Chicken and Potato Salad

A simple lunch or easy supper that is quick to make and shows off our delicious smoked chicken.

 1kg new/salad potatoes
 1 bunch spring onions (finely chopped)
 300g smoked chicken breast (cut into thin batons)
 1 tbsp cucumber pickle
 1 heaped tbsp. garlic confit mayonnaise
 2 tbsp olive oil
 ½ tbsp red wine vinegar
 ½ tsp Dijon mustard
 salt & pepper
 chopped herbs to finish (eg dill, mint, parsley)

Scrub and cut the potatoes to an even size.

Put them in a pan with plenty of salted water, bring to the boil and simmer until nearly done.

Take off the heat and drain.

Meanwhile, make the dressing (mayo, oil, vinegar, mustard and cucumber pickle) then add the spring onions. Check the seasoning, and mix in to the warm potatoes (make sure they’re cooked enough first).

Add the smoked chicken. Fold it all together and garnish with the herbs.
