Here's our take on the traditional guacamole. These buttery avocados are mashed into guacamole with fragrant coriander, a hint of chilli spice, and a burst of zesty lime juice. Just a few ingredients are all you need to make the best guacamole, perfect as a side dish or dip.
Grind a teaspoon each of chilli, onion, and coriander with a pinch of coarse salt in a pestle and mortar to form a paste.
Peel and stone the avocados. Cube and mash them, leaving some chunks.
Mix the chilli paste into the avocado, then fold in the tomatoes, remaining onions, chilli, and coriander. Add lime juice and salt to taste.
