Our free range pork is from Simon Price, just outside Sidmouth. Made from a hand of pork (half of the shoulder) we rub chilli, fennel seeds and olive oil into the meat and leave to marinade. All you need to do is pop it in a baking tray and slowly cook giving you a traditional Italian styled porchetta roast.
