The original cheesemaker, Robin Congdon, initially developed a sheep’s milk, Roquefort inspired cheese, Beenleigh Blue. Then came Devon Blue, a cow’s milk blue cheese, which could be made year round when sheep's milk is in short supply. We visit Ticklemore Dairy twice a year to taste and select batches with cheesemaker Ben Harris. He also visits us with his cheese a few times every year. This dialogue is really essential as the cheese is matured on the farm.
