Our cured meats are all made in our butchery at Staverton.
Selection includes:
Coppa – Cured, peppered & air dried spare rib fillet of pork
Air-dried beef – Organic beef silverside cured, marinated in our marmalade and air-dried before slicing.
Lonza – Our version of the Italian staple peppered cured pork loin – but we use free range, Devon bred and reared, free range pork loin. We cure it, season it, and then dry age it for up to 2 months.
Port Cured Ham – Our port cured ham is our take on jamon serrano. We cure our free range pork legs and then soak them in port before dry aging them for 3 months.
